II.Principles of interpreting dishes'names: Common practices: ◆ Giving the names according to 1 their specific ingredients and ways of cooking. E.g蛋炒西红柿scrambled eggs with/and tomatoes Literal rendering with explanations when the name is interesting and specially associated. 龙虎斗“stewed snake with bean-curd'(paraph) Or:"literally it means 'a dragon fighting with a tiger, while actually the ingredients are snake and bean- curd,so called because in Chinese,a snake is also known as a little dragon while bean-curd sounds very close to fighting with a tiger
